Easy Healthy Veggie Soup
Serves 6
Ingredients
A glug of Olive oil
1 tin x Butter beans
1 small White Cabbage
400g Peas
3 medium Courgettes
2 Leaks
4 large Celery sticks
Water - enough to cover all the veggies
1 veg stock cube
To garnish
Parmesan
Za'atar
Method
Chop all the ingredient except the peas and butter beans.
Take all the chopped veggies and put in the pot with the oil, crumble the stock cube and allow to sweat and stir occasionally. Once the veggies are all soft (roughly 5-10 mins) add the water and allow to boil up for about an hour and then add the peas and butter beans (drained). Add more water if you think there isn't enough and continue to boil for another 20-30 mins. Add salt and pepper to taste.
To serve add grated Parmesan and a sprinkle of za'atar.
