Spring Salad

You'll really feel like Spring is here (no matter the weather outside) whilst preparing this beautiful salad.

Zesty, nutritious and bursting with flavour, it's the perfect side dish for lunch or dinner gatherings. Best of all, the ingredients are cheap and it's easy and quick to create.

 

SERVINGS: 4-6 AS A SIDE     PREP TIME: 15 MIN

INGREDIENTS

Salad:

  • 2- 4 little gem lettuces (or 2 cos lettuces), washed & quartered/cut into wedges
  • a couple of handfuls of pea shoots
  • 6 spears of asparagus, trimmed & finely peeled
  • 1/2 a lemon, finely sliced & halved
  • 1 ball of buffalo mozzarella, drained and roughly torn
  • fresh peas, podded

Lemon mustard dressing:

  • 6 tbsp of extra virgin olive oil
  • 3 tbsp of lemon juice
  • pinch of sea salt
  • pinch of black pepper
  • 1 tsp English mustard

 

METHOD:

1. Mix the dressing ingredients, taste adjusting with extra lemon juice or salt/pepper (if needed) & pop to one side.


2. Lay the little gem & pea shoots randomly over the base of a medium- large platter, sprinkle over the shaved asparagus, lemon halves and finish with the fresh peas (keeping some in the pods halved) and torn buffalo mozzarella.


3. Drizzle over the dressing, serve on your favourite platter and enjoy!
