Mango & Chicken Satay Lettuce Boats

A delicious blend of sweet and savoury, the best part about this recipe is how easy it is to make! The combination of gorgeous satay chicken with the freshness of mango and crunchy lettuce makes these the perfect party bites with a difference that your guests will love.
Quick to whip up if you’re in a hurry, they are an easy-to-eat snack for big gatherings whilst still being nourishing and healthy.

INGREDIENTS:
Dressing:
2 tbsp Mango Chutney
2 tbsp Tahini
2 tbsp Water
2 tbsp Honey
2 tbsp Satay sauce (any bottled variety of your choice)
A pinch of salt and pepper
Boats:
1 x medium pre-cooked rotisserie chicken, shredded
1 x ripe mango, finely diced (I bought readymade sliced mango and diced it)
2 x Gem Lettuce (Endive is also fine, or any lettuce leaves of your choice that are small and curved enough to make the boats)
METHOD:
- Place all of the dressing ingredients in a large bowl and mix well until they’ve formed a smooth consistency (keeping a small amount of dressing to one side to use as garnish at the end)
- Shred the chicken from the bones, add to the dressing and mix well until the chicken is nicely coated
- Leaving a little to one side for garnish, add in the diced mango and mix everything together
- Separate your lettuce into individual leaves
- Build your boats by spooning a little of the mixture into each lettuce leaf (careful not to overfill the boats :))
- Decorate each boat with a little more diced mango for added colour, and a drizzle of dressing to serve
Serve on a large platter as a main, side or starter and enjoy!
