Green Dip

RECIPES BY THE SOCIAL KITCHEN VOL:1

 

Scrumptious, colourful and packed with goodness, this delicious dip is the perfect snack or side dish for informal get-togethers.

Whip it up in minutes and serve with carrot sticks or crisps for dipping.

 

MAKES A LARGE BOWL     PREP TIME: 10 MIN

INGREDIENTS:

  • 300g frozen peas, blanched
  • 4 sprigs of mint, leaves picked
  • 1 clove of garlic peeled & roughly chopped
  • 2 tbsp of thick greek yoghurt
  • mixed toasted seeds to serve on top
  • a good grating of parmesan (optional)

 METHOD:

1. In a small blender add the peas, mint and garlic. Blend until you have a nice thick paste, add a splash of oil and yoghurt, then blend again until you've got a thick smooth-ish paste.

2. Season to taste then if you fancy add a little Parmesan to add extra flavour. 

Serve up in a beautiful bowl, sprinkling over the seeds for extra texture. Enjoy!
