Cheerful Charoset Salad

RECIPES BY THE SOCIAL KITCHEN VOL:1

I've given this traditional Charoset recipe a fresh twist by turning it into a delicious salad.

The secret ingredient that I think makes this especially moreish is the caramelised pecans :)

SERVES: 6     PREP TIME: 15 MIN

INGREDIENTS:

Salad:

  • 2 little gem lettuces, washed & roughly chopped
  • 1 apple, core removed, halved and sliced into thins
  • 2 matzah, roughly broken up into bite size pieces
  • 5 medjool dates, stones removed and torn up
  • Handful of caramelised pecans, roughly chopped
  • 2 mini cucumbers, roughly sliced

Dressing:

  • Red wine vinegar
  • Juice of 1 Clementine
  • A splash of Sunflower oil 
  • Sea salt 
  • Black pepper

METHOD:

  1. Lay the lettuce onto a serving platter, sprinkle over the apple, matzah, medjool dates, caramelised pecans and cucumbers.
  2. Make the dressing - mix 1 part red wine vinegar to 2 parts oil, add the clementines juice then season with salt and pepper. Taste and adjust the seasoning if needed.
  3. Pour onto the salad and toss together before serving.
