Baba Ganoush with Fried Aubergine & Parsley

Baba Ganoush is a mouthwatering, savoury dip that's one of my failsafe recipes for large gatherings.

Not only is it quick and easy to make, but it's healthy, delicious, and perfect for sharing.

I love adding unique toppings at the end to add depth of flavour and really make it stand out on the table.

Serve it in your favourite serving bowl (seen here in our beautiful Extra Large Black Bowl with Gold Inside) with breads, tortilla chips, crackers or even other raw veggies like carrots - anything goes!

MAKES ONE LARGE BOWL

PREP TIME: 25 MINS

INGREDIENTS

● 1 tub of baba ganoush
● 1 aubergine
● 1 small bunch of parsley
● 1 small garlic clove
● 1 lemon
● Extra virgin olive oil
● Vegetable oil, for frying
● Toasted crushed mixed nuts, toasted sesame seeds & pomegranate seeds, (handfuls of each, to serve)

METHOD

  1. Wash the parsley, pick the leaves from their stems and peel the garlic. Add both to the pestle and mortar (or food processor) along with a pinch of sea salt and smash into a paste.
  2. Gradually add or muddle in enough olive oil along with a good squeeze of lemon juice until you have a thick dressing. Taste and tweak the flavour to your liking, adjusting the seasoning with a little extra sea salt if needed, plus some black pepper.
  3. Cut the aubergine into medium sized chunks. Place a large frying pan on a medium-high heat, pour in about 1 cm of vegetable oil and shallow fry until lovely and golden brown. You can also deep fry these if you prefer. Once ready, scoop them out and drain them on some kitchen towel.
  4. Place your baba ganoush into a serving dish. Toss the aubergine in the parsley dressing, being sure to keep a little aside. Top the baba ganoush with the dressed aubergine and scatter over the nuts, a few sesame seeds and the pomegranate seeds for a burst of gorgeous colour.
  5. Drizzle with the extra parsley dressing and serve with warm breads or tortilla chips of your choice for dipping!
