CHOCOLATE SESAME SEED CAKE

Sesame is such an underused ingredient! It goes perfectly with so many sweet and savoury tastes. In this cake, I’ve combined two of my favourite things – sesame and chocolate! This is a rich and innovative dessert that will be a completely new and exciting taste for your guests.

Ingredients

Chocolate Mix

200g Butter

200g Dark Chocolate (chopped)

200g Golden Caster Sugar

100ml Strong Espresso

100ml Sour Cream

2 Eggs

200g Self-raised Flour

5 tsp Cocoa Powder

Sesame Mix

250g Self Raising Flour

150g Tahini

1 Heaped Baking Powder

150ml Strong Black Coffee

150g Golden Caster Sugar

1/4 tsp Cinnamon

2 tbsp Milk

Method

Heat the oven to 180C.

You’ll need two loaf tins for this. Grease them both with a bit of butter then line them with parchment paper.

Start with the chocolate cake batter. Put the butter and the chocolate together in a glass bowl and set into a pan of water boiling on the stove. Slowly stir, until all the chocolate and butter has melted. Then add to a mixing bowling, containing all of the other ingredients for the chocolate mix and whisk thoroughly.

Set the chocolate mix aside and move onto the sesame batter. Simply whisk all of the ingredients for the sesame mix together in a bowl.

Spoon the batters into two separate cake tins – one tin for the chocolate mix and one tin for the sesame mix.

Bake in the oven for around 45-50 minutes, until you can stick a knife through the middle and it comes out clean. Leave the cake to completely cool. This may take a couple of hours.

In the meantime, move onto the icing. Using a hand whisk, beat the butter, icing sugar and cocoa powder together in a bowl until it’s a soft, creamy consistency.

For topping

400g Icing Sugar

100g Butter

4 tbsp Cocoa Powder

4x 30g Packs of Sesame Snacks

Sprinkle of Golden Nuggets

To Assemble and Decorate

Ice the top of the sesame cake with a thick layer and then place the chocolate cake on top. Then ice the top of the chocolate cake and use a fork to make a pattern over the icing, like shown in the picture. Break the sesame snaps into shards and stick them in the top of the cake. Sprinkle with some Golden Nuggets (you can get these at Waitrose).
