Spinach Crust Salad Pizza

There’s nothing more satisfying than a pizza. So why not try the healthy alternative? All your favourite toppings on a veggie base.
Base Ingredients
1 tbs olive oil
3 handfuls of spinach
2 tbs toasted pine nuts
1 cup of ground almonds
Salt and pepper
Method
Pre heat the oven to 180C.
Combine all of the base ingredients in a blender. Then spoon into a well sprayed 23cm cake tin. Bake for 25 minutes or until the edges are a little brown.
Ingredients
Olive oil
Balsamic
Rocket
Toasted pine nuts
Figs, Avocado, Sweet corn, Baby tomatoes
Toppings
Place the toppings of your choice onto the base and drizzle with olive oil and balsamic glaze. If you add some cheese like mozzarella you can place it back in the oven to grill it for a couple of mins to melt it. However, remember that if you put cheese on your pizza put the rest of your toppings on after it has melted and been in the oven.
