Pimp your rice cake
Some times the simpler the better. It is so much fun with friends to put a range of ingredients on the table and use your imagination to make your perfect rice cake.
Top Row
Right:
Cream cheese with freshly cut cucumber, thinly slice spring onion and flaked almonds scattered on top.
Middle:
Tuna mayo mixed with pickled cucumber cut really small (I love the Whole Sweet Pickled Cucumber from Mrs Elswood - available on Ocado) sprinkled with chives.
Left:
cottage cheese with sliced cherry tomatoes and rocket. Sprinkled with pumpkin seeds and sunflower seeds. This would be delicious with balsamic glaze drizzled on top.
Middle Row
Right:
Homemade hummus (recipe to follow) thinly sliced radishes with a drizzle with olive oil. Sprinkled toasted pine nuts and finished off with paprika.
Middle:
Mashed avocado, sweet corn, chopped fresh cherry tomatoes, grated cheddar cheese. Sliced fresh baby chilli.
Left:
Fresh cut cucumbers with mashed avocado with flaked parmesan shavings and chilli flakes.

Right:
Cream cheese with smoked salmon and thinly sliced red onion with black pepper and sliced or wedges of lemon.
Middle:
Avocado with sesame seeds sprinkled on top.
