Miso Ginger Salmon with Crushed Pistachio

I was very excited to discover the existence of ginger jam. I couldn’t believe it had passed me by! I spent the next couple of days incorporating it into various recipes and found that it worked perfectly in this salmon sauce. This dish is full of flavour and perfect to serve with salad or vegetables for a light but scrumptious meal.

Ingredients

2 fillets of salmon

Crushed pistachios

Sauce ingredients

1/2 tsp miso paste

2 tsp honey

1 tsp olive oil

1 tsp soya sauce

A pinch of salt, garlic salt and pepper

1 tsp ginger jam

1/2 lime juice squeezed

Preparation

Mix all of the sauce ingredients together in a bowl. You will get a nice thick concoction. Places the salmon fillets on top of foil on a tray or in an oven-proof dish. Pour the liquid generously over the fillets. Massage it into the fish and sprinkle with crushed pistachios.

Heat the oven to 180C and cook for 20 minutes or cooked to your taste.

Once out of the oven, you can garnish the fish with micro greens and lime wedges.
