MAHOGANY GLAZED CHICKEN
This is a delicious variation on chutney chicken and does especially well on the barbecue. It is an easy one to whip up and has that incredibly moreish taste to it. Your guests will clean their plates and rush back for more!
Ingredients
2 Cups of Ketchup
¼ Cups of Water
2 tbsp Lemon Juice
2 tbsp Worchester Sauce
5 tbsp Brown Sugar
2 tbsp Soya Sauce
2 tbsp Balsamic Glaze
Salt and Pepper
Garlic Salt
Method
Mix all the ingredients together for the sauce. The key is to taste it and make sure it’s to your liking before you add the meat. Once you’re satisfied, place the chicken into the mix and allow to marinade in the fridge for 30 minutes or overnight – the longer the better.
To cook
I like to cook this in the oven for about 20 minutes on a 180C heat, so that the meat cooks through. Add the chicken pieces to the barbecue and turn every 10 minutes until nicely charred.
