Green Goddess Salad

Decadent yet super healthy, you will absolutely love this gorgeous green salad, and so will everyone you invite to lunch!

Fit for the goddesses in your life, I love the combination of textures from the crunchy broccoli to the vitamin-rich avocado, and at just 10 minutes to make, it's so easy.

SERVES: 2 (just double up if you're making a larger bowl for a bigger group)

PREP TIME: 10 minutes

INGREDIENTS:

GREEN GODDESS SALAD:
  • 1 x courgette, peeled into ribbons
  • 1 x avocado, peeled and finely sliced
  • 75g cooked tenderstem broccoli
  • 3-4 radishes, finely sliced
  • Cress, to garnish (optional)
GREEN GODDESS DRESSING:
  • 75g Greek yoghurt
  • 1 x garlic clove, crushed
  • A small handful of parsley
  • A small handful of chives
  • A small handful of tarragon
  • ½ lemon, juiced
  • 2 tsp olive oil

METHOD:

  1. Start by making the green goddess dressing. Place all the ingredients into a high-speed blender or food processor and blitz until smooth and has turned a vibrant green colour. Taste and season as you prefer.
  2. Then you are ready to assemble your salad. Choose your favourite serving platter and layer up the ribbons of courgette, avocado slices, tenderstem broccoli tips and sliced radishes.
  3. Pour over the green goddess dressing and toss together so everything is evenly coated.
  4. Finish with a scatter of cress and a final lovely drizzle of olive oil.
